My mom gave me a folder full of brochures that she received in 1969 from the Le Sueur County Ag Extension office containing all the information a new bride would need including how to efficiently and effectively keep house, how to prepare vegetables (add cheese!), and "Know Your Cuts of Meat." I leafed through the meat pamphlet for hours, actually learning about cuts of meat for the first time. At the same time I wondered what the spirit of the animal would communicate to us if given attention. These "Spirit of Steak" collages emerged.
